QUICK FREEZING TUNNEL MACHINE FOR CHICKEN BREAST: FAST IQF FREEZING SOLUTIONS

Why Chicken Breast Demands a True Quick Freezing Tunnel

Lean chicken breast is one of the most difficult cuts to freeze well. With high moisture content and very little fat, it is extremely sensitive to slow cooling. When freezing is slow, water migrates out of the muscle fibres and forms large, coarse ice crystals that rupture cell walls — the result is heavy drip loss, a pale washed-out colour, spongy texture and reduced yield after thawing. A quick freezing tunnel machine solves this by driving the core temperature down fast, typically from around +10 °C to below −18 °C within a short, precisely controlled residence time. The faster the process, the more small, uniform crystals stay locked inside the fibres, preserving natural juiciness, protein functionality and product weight.

How the Tunnel Freezing Process Works

Chicken breast fillets, tenders or portioned cuts are loaded onto a food-grade conveyor and travel through an insulated tunnel. Inside, high-velocity cold air at −30 °C to −40 °C is circulated by heavy-duty axial fans and finned evaporators, stripping heat from the product surface while the freeze front moves steadily toward the core. Multi-zone tunnels separate surface crust freezing from deep core freezing, and optional individually quick frozen (IQF) belts keep pieces separated so they freeze as discrete units rather than a solid block.

  • Food-grade 304 stainless steel contact surfaces, welded and polished for easy sanitation and long service life
  • High-velocity air circulation for rapid, even heat transfer across every piece
  • PLC and touch-screen control with recipe memory for belt speed, air temperature and dwell time
  • Modular PU insulated panels that cut energy loss and allow future capacity expansion
  • CIP-friendly construction with smooth, crevice-free interiors that meet food hygiene standards

Integrated Into Complete Poultry Processing Lines

At NPW, the quick freezing tunnel is engineered to sit directly downstream of scalding, plucking, evisceration, pre-chilling and portioning — creating one continuous, automated flow from live bird intake to frozen finished product. Because the freezer is synchronised with upstream throughput, there is no buffer stock, no manual tray handling and no temperature gap where bacteria or quality loss can take hold. This integrated approach is what converts a processing plant into a genuinely high-efficiency operation.

A stable, verified core temperature is the single most important quality guarantee in frozen poultry — and it can only be delivered by a tunnel designed for the real throughput of your line.

Throughput, Labour Saving and Delivery Quality

Continuous in-line freezing dramatically reduces manual handling, cuts labour cost per tonne and shortens the time between slaughter and frozen storage. Before shipment, every NPW unit undergoes performance testing, and finished cartons pass metal detection, weight verification, sealing and container loading checks so that equipment arrives complete and ready to install. Whether you need a single tunnel or a fully integrated slaughter and freezing line, NPW delivers reliable, food-safe freezing technology built to run shift after shift.
