A modern pig trotter processing line is designed to achieve high-throughput, sanitary, and consistent removal of hair and impurities from raw trotters, preparing them for downstream applications such as cooking, packaging, or further value-added processing.
Process Stages:
- Foot Removal/Cutting – Automated cutting of trotters from the carcass with precision to ensure minimal waste and consistent shape.
- Initial Singeing & Cleaning – First-stage flame treatment to burn off coarse hair, followed by rough washing to remove surface contaminants.
- Secondary Singeing & Fine Processing – Re-singeing ensures complete hair removal, especially from crevices, with fine brushing or scraping for uniform surface preparation.
- Secondary Fine Cleaning & Polishing – High-pressure washing and mechanical polishing remove residual impurities and improve skin texture.
- Draining & Sorting – Excess water removal through vibration or air-knife systems, followed by visual or automated sorting by size/quality.
- Collection & Transfer – Conveyor-based transfer to chilled storage or next processing stage, ensuring hygienic handling and workflow continuity.
